There was the (discontinued long time ago) zipit Z2 messenger with hardware and size similar to the calculator you are pointing to, which was completely open and there were many linux distros running. Everything about it can be found on the internet, but the community faded years ago.
Once you have plain Linux on it, you can cross-compile and install any packages for math, emulators, etc.
The cons are:
* Keyboard is qwerty, not really optimized for math, but if you are planning to run Octave you need more a qwerty keyboard than a numeric keypad.
* Screen is decent and in color, but there's no touchscreen.
* You are on your own, I don't know if there are any remnants from the community active somewhere.
