After reading about all of the parsing issues using Convert with Temperatures in
CAS view, I would think it would be better to avoid CAS altogether for conversions.

It's actually not a CAS issue. The problem (if it is one) also occurs in Home when Entry is set to Algebraic or Textbook. I do most of my calculations in Home/RPN but I prefer to do unit conversions in Algebraic because it's fewer keystrokes. Unfortunately it doesn't always work the way I expect.
